An all-inclusive stay can end up feeling more "generic beach holiday" than "Turkey" if you never leave the resort — a day in Kaleici, a visit to Aspendos or Perge, and at least one meal outside the hotel go a long way toward making the trip feel like it actually happened in Turkey.
